Blissful Banana Bancake
- 1 Banana
- 1 Egg
- 4-5 TS Oatmeal
- Patience
- 1 (Coated) Pan
You simply throw the banana, egg and oatmeal together and stir it until it’s a somewhat homogeneous mass. Preheat your pan at 5/10 or 6/10 of your stove capacity. Sizes can vary to your liking but I put 1 TS of the mass in the pan. Then I get about 6 tiny bancakes. However here you need to add some of your patience. Don’t move ’em too early or they won’t get a nice color. Also they might still stick to the pan and you might ruin their look. They will still taste great though.
Pancakecake
Alright! Let’s get us started. The Pancakecake consists of over a dozen pancakes as thin as possible. The more pancakes from the same amount of ingredients the better. I’ve got a special pancakepan from my mother. I’m not sure if there is something equivalent in the USA since there pancakes are eaten generally thick. But well, be creative! My receipts are born from a hunch. Maybe a thicc pancakecake is also tasty.
Between the single pancakes there is a filling. Be creative, again! For this receipt I’ve used two different fillings with another topping for the looks. It’s not perfect, but I forgot what I did the last time/ didn’t had the ingredients I had the last time. However I made it for my Sylvester party and people quite enjoyed it (or were just polite. I’m kinda insecure about my cooking skills since there is no back-uped knowledge behind it.)
Filling One:
- 1 Cup almonds
- Some (4) dates
- 3 tsp cacaopowder
- 5 tsp Chiaseeds
- 1 Banana
- Water
(I’m writing cup but I mean a real cup not some kind of measurement. I’m just throwing the ingredients in as I like. Know your taste vary as you wish.)
(the darker the sweeter. I found some that were quite black already. Even if they don’t look tasty they’re still tasty for a long a time. Don’t throw them away just because they don’t look perfect anymore)
- Nuts in general need to bath some time in water to lose some toxics (the internet can explain it better I’m sure). So put them almonds into water about 12 hours before you wanna start cooking. Or over night. The water can be thrown away. Wash those almonds. The dates also can bath in some water for 30 – 60 mins. You probably also should cut them into smaller pieces. Then they’re easier to be mixed. Then throw the almonds, the dates and the chiaseeds into the mixer and mix ‘em with some water added.
- Add the cacaopowder. And the banana. Maybe cut the banana into smaller pieces, too.
- Add more water until there is about half a liter water in there in the end.
- Fill it into some cup or something and give it some time.
Additional info:
- The dates are for sweetening. You could use normal sugar but that’s a “washed” food. And that naturally. God, I’m missing the English words here. That fabricated sugar just isn’t healthy.
- The chiaseeds are for thickening it. So it becomes similar to pudding. Chia doesn’t have much of a taste itself. The thickening also might be given time, maybe even overnight. No need though imo.
- The banana is also for sweetening. Atleast partly. I just like bananas, even though fresh from the plant they’re tasting quite better, I heard.
The almonds can be replaced with whatever nuts you want. Recently I made something with similar with wheatflakes (is that the right word?). also tasty. Btw I probably tried making some new chocofillings that are probably better than what I wrote here, since I got some new inputs and ideas since then. But for now you get the receipt I prepared for Sylvester. I might add more receipts later on.
Filling Two:
- 1/2 cup hazelnuts
- A few bananas
- Honey
- I didn’t do it but in retrospect the hazelnuts need some roasting. Hey Hazel, you are just nuts! Enough roasting for now, I guess.
- Mix ‘em.
- Use fork to munch the bananas. Or squeeze them until they’re munched when they’re still in the peel. Saves cleaning water.
- Sweet them with some honey.
Pancakes:
- 250 g flour (I used 175 wheat and 75 spelt)
- 5 g salt
- 75 g warm/liquid butter
- 3 eggs
- 0.5 l milk (maybe a bit more)
- Put the flour into a bowl and slowly add about 2/3rd of the milk. Keep stirring it so that no lumps are created.
- Add eggs, salt and rest of the milk. Keep stirring it.
- Add the butter.
- Stir.
- Needs to be a homogenous mass. Best to use the mixer or similar tool.
- Maybe add some more milk, if the pancakes don’t become as thin as you want. Somme experience needed. I use about 0.55 – 0.6 l milk in total most of the time.
- Put the mass in the hot pan. Heat is at 4 (when 6 is max). For this step it is best to take the pan from the plate for a moment. Then it’s easier to spread the mass in the pan. Spread it by tilting the pan. If it’s too thick, try less mass next time. If there are holes add some more mass or add milk into the bowl for the next tries or let the pan cool down a bit longer.
- Have some patience
- The pancake takes a minute or so. If you try to turn over too early, it will break apart. Turn aorund by throwing which takes some practice or with a flat tool.
- The other side takes less time. Half minute maybe. I didn’t take the time. You’ll see yourself.
- Repeat step 7 to 10 as often as possible.
Congratulations now you’ve got everything you need! After you let the pancakes cool down a bit stack them alternating or as you like with the fillings. The pancake on the top should be nice looking. Just for the looks of it. As topping I had an orange lying around and some tasty almond chocolatebar. The last time I topped with strawberries, whipped cream and cut bittersweet chocolate. That was better, but rn it’s not strawberry season.
I’m no cook and have no idea what I’m doing. I trust my tongue and imagination. I might fail from time to time, but even the worst food can taste good when I see all the work, I’ve put in. So try for yourself what you like. In your own kitchen no one sees you crying! Only the tasty receipt have to leave your kitchen and migrate to your guests.
